I Dof Mati - Viticultrici
Our labels,
Our Chess
We currently produce five labels, each represented by a chess piece,
because, in our opinion, chess and wine have a lot in common: a thousand-year-old knowledge the ability to wait, respect and predict the ‘next move’ of nature.
The Pedone is represented by the easy and pleasant Merlot Tornato,
the Horse by the austere and elegant Colline Novaresi Nebbiolo DOC ‘Trama’,
the Alfiere by the fresh and decisive Colline Novaresi Bianco DOC ‘Eresia’,
the Queen from the surprising and spicy Colline Novaresi Vespolina DOC ‘Bona’
and the King from the noble and solemn Ghemme DOCG ‘Il Matto’, an exceptional ambassador of the territory
and also perfectly suited to great ageing.
Colline Novaresi Vespolina DOC BONA
Colline Novaresi Bianco DOC ERESIA
Ghemme DOCG IL MATTO
A ruby red Vespolina, characterised by the unmistakable spiciness of pepper and intense aromas of fresh fruit: morello cherry, cherry. The taste is fresh and soft with spicy notes accompanied by hints of red fruits and flowers. Excellent with cured meats and local cuisine, with first courses and tasty meats and cheeses.
This Vespolina is the queen of our chessboard: a tribute to Bona di Savoia, the woman who contributed, precisely in Ghemme in 1467, to the peace between the Sforza and Savoia after years of conflict on our hills.
Brilliant straw yellow in colour. The indigenous grape variety from which Eresia originates is considered the ‘redest’ of the whites, displaying an authentically full-bodied, floral and fruity nature, with hints of aromatic herbs, enriched by an important mineral note.
Excellent as an aperitif, perfect with fish dishes and paired with cheese.
Heresy is iconically our bishop, hence the violet colour of the piece on the label: a historical reference to the Fara Novarese founded by bishops in the 10th century and then burnt by the Visconti family despite it being owned by the Church, but above all a reference to the heresy of an extraordinary vine in our territory too, recognisable in its vigorous personality, but unpronounceable in its denomination.
Ghemme is ruby red in colour with garnet hues, characterised by intense aromas of red fruits, violets and tobacco. The taste is dry, harmonious and persistent.
Excellent in combination with full-bodied first courses, red meats, game and cheeses.
Ghemme is the King of our chessboard, one of the highest oenological expressions of Alto Piemonte, the territory we love and in which we operate. For this label, we chose the evocative name of Il Matto (The Fool), not only because it represents the decisive move and objective of the entire chess game, but also because it fully reflects the calculated ‘madness’ in approaching to a DOCG with such a high and prestigious tradition.
Merlot TORNATO
Colline Novaresi Nebbiolo DOC TRAMA
Merlot with a particularly vivid and intense red colour,
the bouquet opens up aromas of ripe red fruit which are accompanied by the delicate vegetal notes typical of the variety, kept unaltered by the traditional vinification in steel only, in the mouth it releases unexpected savouriness and minerality. Excellent with first courses, red and white meats.
Tornato is pure Merlot, an atypical vine for the Colline Novaresi, capable of astonishing; it is the pawn on our chessboard, because on the nose we recognise the typical Merlot scents, on the palate it surprises and returns with an unexpected freshness, just as the pawn at the end of the chessboard comes back becoming another piece.
Bright colour, fresh and crisp nose of small red fruits, delicately spiced by ageing in wood. Fresh, savoury, tannic, Trama brings to the glass and returns to the palate the sweet, age-old, unrepeatable ‘dustiness’ of the alluvial glaciers on the slopes of the great Monte Rosa.
Excellent with cured meats, mature cheeses, stuffed pastas, risottos and meat-based main courses.
Harvested at the first mists, Trama is the knight of our chessboard, the versatile piece with the brilliant move. The weft is the transversal thread that forms the armour of a fabric, just as Nebbiolo is the inescapable element, the oenological constant at the heart of Alto Piemonte, the wine-growing territory we love and in which we operate.
